Avocado Toast

Hi lovely! Happy friday, I'm so happy it's the weekend! Just about to dig into some late lunch. This is one of my all time favorite easy healthy meals. It's so easy to prepare and it's very filling and nutritious. I'm having whole wheat toast with sliced avocado, with some seasoning (sometimes I sprinkle a little lemon on top). Avocados are an excellent source of omega-3 fatty acids that we need to absorb vitamins. It also makes our skin glow and our hair healthy and shiny. Then I fried some eggs (great protein) and included some carrots and cucumbers to get in my veggies. I usually switch up the veggies, so sometimes I'll have this with tomatoes and/or broccoli. Love it cause it's all totally fresh, natural and tastes so good! Feel free to share any easy healthy food ideas below :) XOXO

  5. A fried egg? Yeah good protein, but high in cholesterol...and on top of that frying it! This isn't "too"healthy.Not good. hard boil it and only eat whites. And instead of just eating one you can eat two or even three because there are only 17 calories in a hard boiled egg white and no cholesterol! Heart healthy people! 92 kcal's in one large fried egg.210mg cholesterol.

    but everything else is great!

    1. Yeah. Fried egg is not that healthy. Boiled eggs in a salad with lettuce, carrots, tomatoes, olives, rocket, watercress, olive oil, croutons, ricotta and some yougurt with lemon juice and a pinch of salt as sauce for the salad. It's the best. I love eating fresh and cold salad here in Brazil, since the weather is so hot.

    2. Of course there would be a more lighter version of an egg but if you fry the eggs in a good oil it is perfect. Or try Ghee.. this is some kind of butter from the ayurveda-kichen. Also very healthy.
      And about the cholesterol. there is a man called dr. Strunz from Germany and he made studies about the cholesterol in eggs. The result was that the cholesterol in eggs has absolutely no bad influence on you^^ so no worries!

  6. Yum!!! I had something similar for lunch today. Rye bread toast with avocado (instead of mayo) and some ham. I also cut up some tomatoes and put them on top. It was delicious! I have to try what you had some time :) xoxo

  11. Great breakfast! Im pregnant and it was just what I need in the morning. I drank ruccola and orange juice with ice cubes. That juice is replacement for morning coffee. You need to juice one orange and 250 g of ruccola. Yum!
